Nybble Café now open in Gallipolis

GALLIPOLIS — The newest business to open in Gallipolis’ historic downtown served its first customers on Thursday afternoon.

Nybble Café, a unique café that adds a technological theme to its guests’ dining experience, officially opened for business at 12 p.m. on Thursday serving a host of supporters on hand for the event café-style food which includes a variety of salads, soups and sandwiches — items made with locally-bought food where possible, according to owner and executive chef Bryan Blair.

Additionally, Blair previously reported that the restaurant, located at 42 Court Street, was renovated with locally-purchased materials, and features a stunning collection of artwork created by local artists.

Nybble, which has been supported by the Digital River Project, is a high-tech operation and has plans to have constant Twitter and Facebook feeds on the flat-screen televisions that adorn the restaurant, as well as allowing customers to access its menu and make their orders via iPads. Customer orders taken at the front of the café are also completed on a nondescript iPad utilized by the Nybble staff.

The word “nybble” itself also has a double meaning that lends itself to the world of food via the world of technology. While a “nibble,” when referring to food, is a small bite, in computer lingo, a nybble equals four bits of computer memory, or one half of a byte. Therefore, two nybbles always equal one byte.

At Nybble Café, the signature dish is the “megabyte” which also has the distinction of being a unit of computer memory equalling one million bytes.

Thursday’s ribbon cutting and grand opening was celebrated by local officials, dignitaries and the Digital River Project Committee, but the way to the event was not without a small speed bump.

The opening was held just a month after the initial ribbon-cutting ceremony which was slated for September 20.

The original grand opening was delayed after Blair received word that the paperwork he had received from the State of Ohio Building Department to secure a Certificate of Occupancy necessary to open the café was not complete.

Despite the small setback, it is the hope of all advocates of reviving Gallipolis and Gallia County that Nybble will thrive and be just the first of many new businesses to open in the area.
